A cheese bar is opening in London and we cannot wait

Following the “do one thing, and do it well” ethos of the Gin Hotel and the crisps and dips café, a cheese bar is flinging open its doors in London.

The Cheese Bar (for that is its Ronseal-esque name) is the brainchild of Matthew Carver. Carver started selling toasties and cheese out of The Cheese Truck, a bright yellow 1970s ice cream otherwise known as ‘Alfie’, to lactose-tolerant foodies at London’s Maltby Street Market and UK music festivals in 2013.

Since then, his team has served over 150,000 sandwiches and melted over 20 tonnes of British cheese – and now, after a successful crowdfunding campaign, he’s ready to open his first permanent restaurant.

“Going from street food truck to permanent location feels a bit like starting all over again,” Carver tells Stylist.co.uk.

“I feel a bit like a pop star who’s had his first album, and now he’s got to deliver on the follow-up – but it’s very exciting!”

This weekend! You can find us @maltbystreet and @printworkslondon. Serving the best grilled cheese in town...🧀🎉

The Cheese Bar’s menu will include ‘Alfie’ classics such as the Cropwell Bishop Stilton, Bacon & Pear Chutney sandwich. There will also be new additions, from the Queso Fundido (a “sexy Mexican version of fondue”, according to Time Out) to the Breakfast Poutine: a spin on the legendary French-Canadian dish, this time with bacon gravy, candied pancetta, cheese curds and a fried egg.

For dessert, there’s also a dark chocolate ice cream sundae made with honey and Beenleigh Blue, a sweet ewes’ milk cheese from South Devon. Drool.

It's that time of the week! We're @maltbystreet from now till 4pm for your grilled cheese needs.... Trust me, you need! 🧀

One of the principal aims of The Cheese Bar is to champion urban cheesemakers living in greater London, from La Latteria in Acton to Peckham’s Gringa Dairy. You’ll be able to choose from a selection of more than 30 British cheeses – and a similarly huge range of craft beer.

The Cheese Bar will be opening in the historic Grade 1 listed Camden Stables Market in the first week of March. Elbows at the ready.
