Cloud eggs are the latest Insta-friendly way to do brunch

By now, it’s almost a cliché to observe that Instagram has revolutionised the way we make and consume food. While the rise of smartphone photography didn’t create our desire to prettify our meals, it has magnified it to a white-hot intensity, to the point where it sometimes seems as though restaurants, cafés and food bloggers are designing recipes specifically with Insta-appeal in mind. Cynics might scoff, but research has shown that an attractive plate actually makes our food taste better – suggesting that spending a bit of extra time on food styling could have benefits beyond raking in those Insta-likes.

Now, after avocado roses and goth ice cream have had their time in the spotlight, the latest food trend sweeping Instagram appears to be cloud eggs. And unlike many complicated gourmet crazes, this brunch recipe is as simple to make as it is easy on the eye (and tasty on the tongue).

Essentially just a fancy version of baked eggs, cloud eggs will add a little bit of fluffy white chic to your regular hangover fry-up or healthy breakfast – as these Instagram posts will attest.

Fancy making cloud eggs yourself at home? Denver-based lifestyle blogger Heather (aka @mrspyrex) has helpfully shared her recipe for the perfect dish.

  1. Separate egg whites, save yolks aside. Whisk egg whites until firm. 
  2. Gently fold in desired seasonings. (You could do ham, chives, etc. I did rosemary, parmesan, and garlic salt.)
  3. Scoop egg whites onto baking sheet, creating a crater in the middle to hold the yolks. 
  4. Bake at 175°C (350°F) for about 10 minutes, or until egg clouds begin to brown on top. 
  5. Salt, pepper, and serve!
