Coconut cream chicken

A creamy curry from Quilon restaurant

This delicious curry recipe comes from The Quilon, an award-winning restaurant specialising in South-west coasting Indian cuisine.

Ingredients

  • 6 Chicken Supreme
  • 2 Teaspoons Yogurt
  • 1 Teaspoon Coconut Mixture
  • Tablespoon of Thick Coconut Milk
  • A pinch of Cardamom powder
  • Salt to taste
  • 2 Tablespoons of Grated Coconut
  • ½ Teaspoon of Mustard
  • ½ Teaspoon of Cumin
  • 1 Green Chilli

Method:

Step 1: Grind the coconut, mustard, cumin, green chilli to a fine mixture.

Step 2: In a bowl combine yogurt, coconut mixture, coconut milk, cardamom powder and salt.

Step 3: Marinate the chicken supreme with the mixture at least for 2-hours.

Step 4: Remove the chicken supreme from the marinade and grill over the griller.

Step 5: Put the remaining marinade in a pan and cook over a high flame to reduce.

Step 6: Place the grilled chicken in the pan and toss so that the supreme are evenly coated with the mixture.

Step 7: Serve hot with salad.
