Of all the things we let slip in our daily routines - skipping our skin cleanse, never making it to the gym and forgetting to clean out the fridge - the thing we feel most guilty about, is not eating enough vegetables.
With the plethora of research around on what our daily required intake should be and a new 'power' vegetable fad out every month, it's not an easy world to keep up with.
The problem is, it shouldn't feel like a chore. We should be eating healthily and regularly, right?
To make our lives much easier we've compiled a list of ten beautiful and incredibly mouth-watering recipes that sneak in plenty of vegetables without compromising on taste. They're also easy enough to whip up as soon as you get home.

Researchers at William Paterson University in New Jersey have done us a big favor by producing a list of 41 'powerhouse fruits and vegetables'. Foods were tested for their content of fiber, potassium, protein, calcium, folate, vitamin B12, vitamin A, vitamin D and other nutrients, all considered important to public health. And what came out on top? Watercress. Try adding it to your diet via these rustic and juicy Bruschettas.
Courgettes contain very few calories, significant levels of potassium and provide useful amounts of immune system-boosting vitamin C. Plus, they taste brilliant when paired with potato.
