3 globally-inspired traybake recipes that are as easy as they are tasty

Lauded by Nigella Lawson and with more than half a million copies sold in three years, the bestselling Roasting Tin cookbook series by Rukmini Iyer evokes something bordering on evangelism from its many devotees. This is largely due to a winning combination of simplicity and inventiveness: while each of Iyer’s dishes can be cooked in a single roasting tin, they also prove that traybakes can be dazzlingly original and impressive.

The latest book in the series, The Roasting Tin Around The World, is packed with dishes inspired by Iyer’s travels around the globe – from south east Asian-influenced aubergine with peanuts, chilli and lime to American-style s’mores with marshmallows and chocolate. And today, we’ve got three recipes to share with Stylist Loves readers – click the button below for meals that involve maximum taste and minimal washing up. The Roasting Tin Around the World: Global One Dish Dinners by Rukmini Iyer (£16.99, Square Peg) is out now

If you’re a fan of candles, you’re going to love these...

We love a scented candle. We also love activities that keep our minds busy during lockdown. So we really love the new breed of grown-up candle making kits, especially Lunar Oceans’ sleek tin (£45). It comes with everything you need to make six small candles, including a tiny whisk and a pleasingly old-school thermometer, and the choice of two scents: pomegranate, hibiscus and lavender or lavender, geranium and amber. Meanwhile, Hazel & Blue’s eco-friendly soy candle kits (£28 each) offer five different scents: our favourite is the Relax and Unwind set with bergamot and amber.

We also love London Refinery’s starter soy candle making kit (£25), but if you need some assistance, the brand is running online candle-making masterclasses throughout June – sign up to learn about the different fragrance families and what top, heart and base notes are (£45 for kit and workshop). Your beloved Jo Malone candles are about to get a run for their money…
