Ingredients

50ml olmeca altos plata tequila
25ml lime juice
25ml homemade rhubarb syrup (300g chopped rhubarb, 85g caster sugar, 75ml water)

Method

Firstly, we need make the rhubarb syrup.

Put the sugar and water in a pan and heat gently until the sugar dissolves.
Add the rhubarb, bring to the boil and cover with a lid reducing to a simmer for around 5-7mins.
Strain and return the liquid to the saucepan, bring to the boil for a few minutes until you get a syrupy consistency.

To make the margarita:

Pour all the ingredients into shaker with ice and shake.
Double strain into a martini glass Garnished with a half rim of salt and lime wedge/wheel.
