Following the “do one thing, and do it well” ethos of the Gin Hotel and the crisps and dips café, a cheese bar is flinging open its doors in London.

The Cheese Bar (for that is its Ronseal-esque name) is the brainchild of Matthew Carver. Carver started selling toasties and cheese out of The Cheese Truck, a bright yellow 1970s ice cream otherwise known as ‘Alfie’, to lactose-tolerant foodies at London’s Maltby Street Market and UK music festivals in 2013.

Since then, his team has served over 150,000 sandwiches and melted over 20 tonnes of British cheese – and now, after a successful crowdfunding campaign, he’s ready to open his first permanent restaurant.
