Lactofree Strawberry Delight Cupcake Recipe
Ingredients
Lactofree Vanilla cupcake
150g Lactofree Spreadable
250g Sugar
2 Eggs
2 tsp Vanilla
250g Flour
Pinch of salt
1 ½ tsp Baking powder
275 ml Lactofree whole milk
Lactofree Strawberry Icing
250g Lactofree Spreadable
750g Icing sugar
1tsp Vanilla
¼ cup Lactofree whole milk
50g Lactofree strawberry yogurt
35g Crushed fresh Strawberries
A dash of pink colouring (optional)
Fresh strawberry for garnish
Method
Vanilla cupcake
Step 1: Mix the butter, sugar and vanilla together until creamed
Step 2: Add eggs one at a time
Step 3: Sift the flour, salt and baking powder together
Step 4: On slow speed mix dry ingredients with butter mixer and slowly add the milk. Keep mixing on slow until all ingredients are combined
Step 5: Spoon into cupcake holder
Step 6: Bake at 340 for 15-20 minutes
Lactofree icing
Step 7: Cream butter, vanilla, yogurt and crushed fresh strawberries together
Step 8: Mix in the icing sugar and milk
Step 9: Whip until fluffy and add a dash of pink colouring (optional)
Step 10: Spoon into piping bag and pipe onto top of your cooled cupcake
Step 11: Add a strawberry on top to finish. SAY YES to a delicious strawberry cupcake!
