Leftovers. I hate waste and if there is anything in my fridge mid-week I put it all together for a scrummy meal. Today is bacon rashers, mushrooms, butter beans - all from the weekend - seasoned with sweet onions, herbs, some frozen veg to add colour and a splash of cayenne pepper to give it a bite! Its particularly satisfying if I'm going out for a drink straight after work too.
