What did you have for lunch today? Our show us your lunch competition is in full swing and entries continue to flow in. From mackerel salad to chickpea and cauliflower curry and venison Carpaccio, we're in complete awe of the intrepid standard of lunches doing the rounds these days.

Caramelised hummous, raw carrots, rocket and avocado drizzled with balsamic vinegar and some brie thrown in for good measure. Oh - and I did buy the baguette to top it off. Waste not, want not!

This is really yummy and healthy, since I started making it we have it at least once a week! You could adapt it to suit you but in mine I start with some prepared couscous and add chopped red peppers, celery and a small amount of red onion, chopped mint and coriander, 1 pack of roasted artichokes & courgettes (from Waitrose) and a few capers. Dressing is finely chopped chilli a generous grating of lemon zest with a tablespoon of the juice mixed with some extra virgin olive oil. All you need then is some really good prawns to mix it all together and voila!

Getting our 'Goan Curry' on! Goan Fish curry (West Indian coconutty curry, we used Halibut and, in very unmeasurable quantities: chilli powder, tumeric, coriander, cumin, cinammon, mustard seeds and a whole lot of other stuff). Seasoned the rice with some more mustard seeds and served with some homemade chutney we found at the back of the fridge and cabbage spiced with yet more mustard seeds and also most of the spices used in the curry - tumeric, cumin, chilli, coriander etc. Was delicious!
