The ultimate power salad

The best thing about this power salad (apart from the fact that it’s deliciously good for you) is the dressing. Bill Granger’s signature ‘Green Goddess’ dressing is every bit as good as it sounds. Make a big batch and save it for later!
Preparation time: 10 minutes
Cooking time: 10 minutes
Ingredients: (serves 4)
1 pink grapefruit
4 salmon fillets
1 tbsp extra-virgin olive oil
100g green beans
2 handfuls of watercress leaves
Handful of flat-leaf parsley
Handful of mint
1 avocado, sliced
Dressing:
Handful of watercress leaves
100g yoghurt
2-3 tbsp mayonnaise
Handful of mixed herbs (dill, basil, mint and parsley)
2 spring onions
Juice of ½ lemon
Method:
Step 1: Peel and segment the grapefruit. Heat a frying pan, brush salmon with oil and season well. Cook skin-down for 3 minutes, turnover and cook for another minute until crispy outside but quite raw inside. Remove and rest for 2 minutes.
Step 2: Meanwhile, blanch beans in a pan of light salted boiling water for 2-3 minutes. Rinse under cold water and drain.
Step 3: Pulse together all the dressing ingredients in a blender and refrigerate till required.
Step 4: Arrange the watercress, parsley, mind, avocado, beans and grapefruit on plates. Slice salmon and put on top, drizzle with green goddess dressing and serve.
