The Christmas cheeseboard should be a bit special. Something that can sit regally on the dinner table waiting for onlookers to nibble a bit off as they walk by, stimulate their taste buds and generally leave you wanting more. That’s why Comté cheese is the ideal choice when creating your cheeseboard this festive period.
With its silky texture and sweet nutty flavour, Comté cheese is delicious when paired with red or white wine and equally as tasty with chunks of freshly baked artisan bread. If it lasts, it can tide you over the entire festive period, from snacking between mince pies to jazzing up turkey leftovers on Boxing Day.
Make light work of those turkey leftovers this festive period and whip up a culinary treat even Delia would be proud of.
Turkey & Comté cheese Sandwich
8 slices country style French bread
1 pound thinly sliced roast turkey
8 slices Comté cheese
¾ cup chopped red onion
1 tablespoon dried thyme
½ cup mayonnaise
½ cup coarse-grain brown mustard
6 tablespoons butter (softened)
8 slices tomato
1. In a small bowl, stir together the red onion, thyme, mayonnaise and mustard. Spread some of this mixture onto one side of each slice of bread. Spread butter onto the other side of the slices of bread.
2. Heat a large skillet over medium heat. Place 4 slices of the bread into the skillet with the butter side down. On each slice of bread, layer 1/4 of the sliced turkey, then 2 slices of tomato, and top with 2 slices of Comté cheese. Place remaining slices of bread over the top with the butter side up. When the bottoms of the sandwiches are golden brown, flip over, and cook until golden on the other side.
