Unicorn lattes are the beautiful brunch trend taking over your Instagram

While we may never know for sure if unicorns once roamed the earth, stamping their hooves and tossing their silky manes in the sunshine, we seem to have a pretty strong idea as to what they would have looked like.

Think glitter, rainbow hues, and all things psychedelic.

So it makes sense that so many #unicorn themed treats have been taking over our Instagrams of late; from #unicornhotchocolate to #unicorntoast, each technicoloured item has captured our imaginations – and our tastebuds – in a pretty big way. But none more so than the brand-new #unicornlatte that’s blowing up our social media feeds at the moment.

The trendy new drink originated from End, a cheerful coffee bar in Brooklyn, USA. And, despite having the word ‘latte’ in its name, this ‘healing’ concoction is, in fact, entirely caffeine free.



It shouldn’t be all too surprising to learn that the #unicornlatte is all about wellness – particularly as the mythical beasts have long been ascribed magical healing powers of their own.

Indeed, in the Harry Potter books, JK Rowling writes that wizards often use unicorn hair to make medical bandages – and that the blood of a unicorn can keep a dying person alive. But, naturally, there’s a catch…

“Only one who has nothing to lose, and everything to gain, would commit such a crime,” Firenze the centaur explains in The Philosopher’s Stone. “The blood of a unicorn will keep you alive, even if you are an inch from death, but at a terrible price. You have slain something so pure and defenceless to save yourself, you will have but a half-life, a cursed life, from the moment the blood touches your lips.”

Thankfully there’s no such price to pay with a #unicornlatte – no unicorns whatsoever are harmed in the making of this pretty brunchtime drink.

Made with ginger, lemon, coconut milk, and honey, it is sweet and nourishing. And, once a brightly-coloured algae is dropped into it, it transforms into a vivid shade of blue.

The drink is then garnished with turmeric and pomegranate powder, as well as edible flowers or vegan sprinkles, to give it that extra ‘wow’ factor.



Speaking to Mashable, the creators of the drink explained: “It was named the Unicorn Latte because the recipe is made to help tap into your most mystical, colourful and vibrant self.

“We want you to fly high and this drink helps you do so.”

They went on to claim that the algae used in the drink can also help to decalcify the pineal gland in the brain, saying: “Decalcifying the gland can lead to extreme mental clarity, and helps on restore health and vibrancy to the physical body.

“It is quickly becoming the antidote to the mid-afternoon brain fog for our customers.”



While we don’t have the exact recipe for The End’s #unicornlatte, the New York Times came up with a similarly restorative – and gorgeous – glug of their own.

Ingredients:

  • 1 ½ cups raw cashews, soaked for 4 hours
  • 3 ½ cups filtered water
  • 1 vanilla bean, insides scraped out
  • 2 ounces cold pressed ginger
  • 2 ounces lemon juice
  • 1 tablespoon Blue Majik spirulina extract
  • 1 tablespoon maca root
  • 3 Medjool dates
  • Spirulina powder, to garnish (optional)

Directions:

  1. Mix in a high-speed blender for 1 to 2 minutes until well blended. Store extra in the refrigerator or in an airtight container or Mason jar.
  2. Serve warm and frothy or chilled on ice.
  3. Optional: Dust with spirulina powder to garnish.

Or, you know, you could just top your regular cup of joe with whipped cream, teeny-tiny flowers, and edible glitter. Your choice…
